Recipe for Chicken Enchiladas
CHICKEN ENCHILADA RECIPE INGREDIENTS: 1lb. chicken breast (I use boneless), bag of colby/jack cheese, 3 green onions, 2 reg.size cans of red enchilada sauce, pack of flour tortillas 1. Boil chicken until cooked thoroughly. Cut into strips. 2. Chop the chives off the green onions and mix in a bowl with the cheese. 3. Pour sauce into 11 x 9 baking pan. One by one, take tortillas and dip them into the sauce, covering both sides, and place them on a plate. 4. Fill the tortillas. Chicken, then cheese mixture. Roll them up and place them back into baking pan. 5. Bake for 20 minutes at 400 degrees. Makes about 8 to 10 enchiladas depending on how much you stuff the tortillas. |
